Challah, Try 2

I wanted a slightly sweeter and more tender challah than last week's loaf. So I revisedHamelman's challah recipe and tried again.

A success! It could be a tad sweeter, but is otherwise exactly what I crave.

The ingredients:

1 kg bread flour
160 g raw sugar
320 g water
20 g salt
30 g whole milk
75 g butter
140 g whole eggs
75 g egg yolks
4 g active dry yeast
